It’s been in the balmy 60 degrees around here. Plus there’s been actual sunshine! Honestly, it feels like a heatwave. And believe it or not, the 9+ feet of snow are pretty much gone! There are still some icky piles of dirty snow here and there, but hey, I’ll take it.Β To celebrate spring finally arriving,Β I whipped up these Ice Cream Sundae Cupcakes.
Let me tell you a little secret about these Ice Cream Sundae Cupcakes. There’s no ice cream in these. Not a drop. But there is a bunch of fluffy, light frosting. Chocolate, strawberry, and vanilla frosting, all three flavors, on top of one vanilla bean cupcake.
And what kind of sundae would it be without sprinkles, chocolate sauce, and a cherry?
My kids were enamored with these cupcakes. First they fell in love with how the cupcakes looked, and once they learned that the “ice cream” was really frosting, their excitement went through the roof. Don’t get me wrong, they love ice cream. But with my kids, I think frosting trumps ice cream when it comes to cupcakes. Their little fingers would pluck off a scoop of frosting each time they passed the platter of cupcakes. Before I knew it, there were a few Ice Cream Sundae Cupcakes with just the cherry on top – no ice cream.
