You know when you have an idea for something and it ruminates in your head for a while? Well, making an Oreo cake has been on my to do list for years. Yup. Years. So why the heck did it take me so long? Well, it’s simple. Every time I’d buy a package of Oreo cookies to make the cake, it would get eaten before I could bake the cake. Seriously. That’s how much we love Oreos.
As a matter of fact, Oreos are one of the only processed foods that everyone in my family loves. My kids have sort of eccentric tastes. When my 2 year old turned 3, she asked for madeleines as her school birthday treat. And my 7 year old prefers sushi when we go out to dinner, but she’ll settle for teppanyaki if we twist her arm π
Β So it’s pretty miraculous that there’s a grocery store staple that everyone loves. And that is the glorious Oreo.
When trying to figure out how to turn the family favorite into a cake, I knew I didn’t want to just make a chocolate cake and throw Oreo frosting on top. I’m sure chocolate cakes with Oreo frosting taste pretty darn good, but that combo just doesn’t scream Oreo to me. So after a bit of searching, I found this glorious Oreo cake from Butter and Brioche, and I knew that this was the one I NEEDED to make.
I couldn’t help but tweak the cake recipe because after so many years of baking cakes, I have my little secrets and preferences when baking cakes π As for the frosting recipe, it’s my very own creation because I’m partial to butter-based frosting rather than cream cheese ones. And finally, my Ultimate Oreo Layer Cake finally came to fruition.

The Ultimate Oreo Layer Cake

This Ultimate Oreo Layer Cake is one layer of rich, chocolate cake and two layers of moist vanilla cake studded with chunks of Oreo cookies. The whole creation is topped with a fluffy, not too-sweet Oreo frosting. If you’re a fan of Oreos then you will fall in love with this cake.
Ingredients
- For the Vanilla Cake Layers!
- 125 g unsalted butter at room temperature
- 250 grams granulated sugar
- 1 large egg at room temperature
- 3 large egg whites at room temperature
- 225 g all-purpose flour
- 2 1/2 tsp baking powder
- 1/2 tsp salt
- 180 mil whole milk
- 2 tsp vanilla extract
- 15 Oreo cookies, crushed to large pieces
- For the Chocolate Layers!
- 30 g unsalted butter
- 85 g all-purpose flour
- 30 g dutch process cocoa
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 tsp espresso powder
- 100 g granulated sugar
- 1 large egg at room temperature
- 1 tsp vanilla extract
- 90 ml whole milk
- 60 ml boiling water
- For the Oreo Frosting!
- 2 1/2 cups unsalted butter, softened
- 5 cups confectioners’ sugar, sifted
- 1 tsp vanilla extract
- 1/8 tsp salt
- 2 tbs whole milk
- 13 Oreo cookies, crushed to a fine crumb
- Mini-Oreos for an optional garnish
Instructions
- For the Vanilla Cake!
- Preheat the oven to 330 degrees F.
- Grease and line 2, 6-inch round pans with parchment paper.
- In a medium bowl sift the flour, baking powder and salt. Set it aside.
- In the bowl of a mixer fitted with a paddle attachment, beat the butter and sugar until fluffy (for about 5 minutes on medium speed).
- In a small bowl, lightly beat the egg, egg whites, and vanilla.
- Add the egg mixture to the butter mixture a bit at a time. Mixing until just combined.
- Add the flour mixture and milk in three additions, starting and ending with the flour mixture. (Add 1/3 of the flour mixture. Beat until incorporated. Then beat in 1/2 the milk mixture. Beat until combined. Repeat the process one additional time until all the dry ingredients and milk are combined.)
- Using a rubber spatula, fold the Oreo pieces into the batter.
- Evenly divide the batter between the prepared pans and bake for 40 to 50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pan for 15 minutes.
- Turn the cakes out onto a cooling rack and allow them to cool completely.
- For the Chocolate Cake!
- Preheat the oven to 350 degrees F.
- Grease and line 1, 6-inch round pans with parchment paper.
- Melt the butter in the microwave or in a saucepan on the stove over low heat. Set melted butter aside and allow to cool slightly.
- While butter cools, in a medium bowl sift the flour, cocoa powder, baking powder, baking soda, and salt. Lightly whisk in the espresso powder.
- Add the sugar, egg, vanilla, milk, melted butter and boiling water. Beat the mixture together with a wooden spoon until combined and smooth.
- Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Once the cake is removed from the oven, allow the cake to cool in the pan for 15 minutes.
- Turn the cake out of the pan on to a cooling rack. Allow the cake to cool completely.
- For the Frosting!
- In a bowl of an electric mixer fitted with a paddle attachment, beat the butter and sugar until fluffy.
- Add the vanilla and salt.
- Add the cream and beat until fluffy.
- Fold in the Oreo crumbs (I reserved about an 1/8 cup of the crumbs to decorate the cake)
- To Assemble the Cake!
- Using a serrated knife, level each cake so it is flat.
- Place about 1/4 cup of frosting between each cake layer. Place the filled cake in the refrigerator for about 15 to 20 minutes.
- Place a thin layer of frosting all over the top and sides of the cake. This is the crumb coat. It will lock in any loose crumbs on the cake. Refrigerate the cake for about 20 minutes.
- Place the final layer of frosting on the cake.
- Using the reserved Oreo crumbs, I pushed them into the sides and top of the cake.
- Using a piping bag fitted with a star tip, I piped dollops along the top of the cake. Then I placed a mini-Oreo cookie on top of each dollop.
