Chocolate Rainbow Cake

If you saw my post from a few days ago, you know how much I love rainbow treats. Since St. Patrick’s Day is right around the corner, I couldn’t help but give you another rainbow-themed dessert. This time it’s a Chocolate Rainbow Cake!

As an avid dessert eater and creator, I’m a huge fan of cakes. I think they’re easier and faster to make than cupcakes, and they’re pretty impressive. My one sticking point with cakes is that they’re often large. Which can be convenient when you’re feeding a big group, but not so great when you’re making dessert for just a handful of people. Yeah, leftovers are awesome, but they can turn into something not-so-awesome when you’re the only eating them. When there’s leftover cake in my house, I find myself on a steady cake diet – eating it for breakfast, lunch, dinner, dessert…basically the entire day. It’s not pretty.

To avoid that fate, I love making smaller cakes. This Chocolate Rainbow Cake is made from 3, 6-inch layers. It still feeds six adults, so it can be easily eaten by a much smaller group. Plus, having a smaller cake makes it easier and faster to fill and frost, but it’s still just as impressive as any large sized cake.

    Aida you make the most beautiful cakes! I love this gorgeous rainbow cake and I am a huge fan of the 6″ cake as well. So much more manageable!

    This is so colorful! I love it! Most of the time you see rainbow cakes with a vanilla cake. I love that this is made with chocolate!

      Thanks so much Des! I know – I love vanilla rainbow cakes, but I’m such a huge chocolate cake fan. So now it’s the best of both rainbow and chocolate cake!
