Peanut Butter S’more Cookies

A little while ago, I posted these S’more Sandwich Cookies, and ever since, I’ve been sort of obsessing over how I could make the cookies better. But then I thought, forget it. I was convinced that they just couldn’t get any better. Then, one afternoon when I was dipping green apples into a mountain of peanut butter (which, by the way, is one of the best snacks, ever), it hit me. Add peanut butter to a s’more! And that’s how these Peanut Butter S’more Cookies were created.

When creating these Peanut Butter S’more Cookies, IΒ  knew that I wanted the peanut butter cookies to be soft and chewy . I was also certain that a peanut butter cookie wasn’t enough peanut butter.

So, between the peanut butter cookie and the marshmallow cream is a dollop of straight up peanut butter. It may seem trivial, but it really reinforces the peanut butter flavor in these Peanut Butte S’more Cookies.

To give these cookies a bit of balance so they’re not so sweet, they’re also dipped in some dark chocolate. Plus, I s’more isn’t a s’more without some chocolate πŸ™‚

The drizzle on top of the Peanut Butter S’more CookiesΒ  is just some more…you guessed it, peanut butter! It’s there to make the cookies a little fancier, and who doesn’t like just a little more peanut butter?
