Did someone just say chocolate cream pie? Well, yes, please! And to all my friends out there with diary and egg allergies and those of you who are vegan, well, this pie is also for you! Aside from how delicious this luxurious chocolate cream pie is, it’s very easy to make with ingredients that you can find in any old grocery store.
It all starts with a thick chocolate cookie crust. I used regular Oreo cookies for the crust because they’re egg and dairy free. If you’re like me and enjoy a substantial, thick, crunchy cookie crust, then this is the crust of you. I promise it won’t disappoint.
For the filling, I just tossed in a block of silken tofu, some melted dairy-free chocolate chips (I used Ghirardelli bittersweet chocolate chips), dairy free-milk (I used almond milk), a bit of honey, and vanilla extract into the food processor. Blended it all up to silky perfection. Poured it into the crust, and chilled it in the fridge.
My favorite part of the dessert is probably the coconut cream on top. It’s so fluffy and rich, plus the coconut works so well with the dark chocolate filling.
This vegan chocolate pie isn’t just good for a vegan dessert. It’s any chocolate-lover’s dream. When my family tried this pie, they couldn’t believe it was made with tofu. And my crust-loving kiddos went nuts for this vegan cookie crust. They asked me to make it again – just for the crust!
- For the Chocolate Crust: 30 chocolate sandwich cookies (I used Oreo cookies)
- 2 1/2 tbs vegan butter (I used Earth Balance)
- For the Chocolate Cream: 16 ounces bittersweet chocolate, chopped
- 1/3 cup non-dairy milk (I used almond milk)
- 1 tsp vanilla extract
- 16 oz silken tofu
- 1 tbs honey
- For the Topping: 13 oz canned coconut milk, full-fat, well-chilled
- powdered sugar to taste
- For the Chocolate Crust: Preheat the oven for 325 degrees F.
- Crush the cookies to fine crumbs in a food processor.
- Melt the vegan butter in a medium bowl. Mix the cookie crumbs with the melted butter.
- Press the crumb and butter mixture into a 9 inch pie dish using the back of a 1/4 measuring cup.
- Bake for 10 minutes.
- Remove the crust from the oven, and allow it to cool completely.
- While the crust cools, melt the chocolate. Set it aside to allow it to cool slightly.
- In the bowl of a food processor, add the tofu and non-dairy milk. Puree until smooth.
- Add the melted chocolate, vanilla, and honey. Puree until smooth.
- Pour the filling into the completely cooled pie crust.
- Place the pie in the refrigerator to cool completely, about an hour.
- Before serving, make the coconut cream.
- Scoop up the coconut cream that has risen to the top of the can.
- Place it in the bowl of a mixer fitted with a whip attachment. Whip the cream until fluffy. Add the confectioners’ sugar and mix until incorporated.
- Top the pie with the cream.
