Vegan Chocolate Mousse Cake

This Vegan Chocolate Mousse Cake is such a dark, chocolaty decadent dessert that it’s hard to believe it’s butter, egg, and cream-free. It starts with a moist, tender dark chocolate cake, and it’s topped with a luscious, rich chocolate mousse. It’s the perfect lighter treat for Valentine’s Day.

Doesn’t it seem like a cruel joke that right when I’m starting to get in the stride of eating healthier for the New Year, Valentine’s Day just pops up. Then all of a sudden it’s chocolate. Chocolate everywhere.

Instead of letting it derail me completely, I’m lightening up a chocolate treat that’s satisfying and full of deep, rich chocolate flavor. The recipe for this Vegan Chocolate Mousse Cake is part of a wonderful eating healthy initiative called #EatHealhty16.
